Lindera benzoin is a common understory shrub in wetter portions of the forest in eastern North America. It tastes very much like the East Indian native allspice. Leaves are best in the spring, but can be gathered all summer as well.

Juniper forms the dominant note, resiny and vaguely citrusy, supported by the camphor quality of yarrow and the spiciness of ginger. The bitterness is mild, equivalent roughly to a standard wheat beer.
